
You may have noticed that I like adding random fruits and veggies into my desserts and the reason for this is because I’m trying to offer my family (and myself obviously) healthier sweet treats when they ask for it. So, this week on Five for a Fiver is like any other week, except I made this:

These Chocolate Orange Cookies are so ridiculously easy to make that all you need to do is grab a mixer (or use elbow grease and a large bowl) and once the ingredients are combined, pop them in the microwave and bake for around 10 to 12 minutes at 180C.
BAM! You’ve got chocolate orange cookies!
I found that the best way to work the mix without the resulting cookies becoming too dry is to mix the dry ingredients first, i.e. the self-raising flour, cocoa powder and brown sugar. If you’re using a liquid sweetener like maple syrup (I would have preferred using a natural sweetener, but I had run out at the time – it’s healthier!) then wait until you’ve added the cashew butter (you can use peanut butter, it’s cheaper) and clementines first. It was easier to work the wet ingredients into the mixed dry ingredients rather than the other way around.
If you’re using an electric mixer on the high setting, then there’s no need to mash up the clementines or satsumas first as it will do the work for you. Once everything is combined, you’ll get a lovely chocolatey mix to work with.

The result was literally a cookie that tasted of chocolate orange. You can use any kind of butter, like peanut butter, but I found that cashew butter added a sweeter flavour and less of the nuttiness that peanut butter provides. Although, when I make this recipe again, I think nuts would fit perfectly in this recipe – or chocolate chips!

Ingredients
3 juicy satsumas or clementines
3 tbsps cashew butter (or any nut butter you have)
2 tbsps cacao powder
2 cups self-raising flour
½ cup brown sugar
Directions
- Preheat your oven to 180C/350F/GM 4
- Mix all the dry ingredients in a mixer
- Add the clementines to moisten up the mix.A mix on a high setting will squash the juice out of the clementines and create a nice dough consistency
- Spoon a tablespoon worth onto a greased lined baking tray and bake in the middle shelf of the oven for around 10 – 12 minutes
